Peanut Butter Scotchies

  • Preheat oven to 350°F
  • Spray cookie sheets with non-stick cooking spray.
  • Break up cookie dough into large bowl; let stand 10-15 minutes to soften.
  • Add the peanut butter, brown sugar, vanilla and butterscotch morsels; mix well.
  • Drop dough by teaspoon, two inches apart onto sheets.
  • Bake 10-13 minutes or until just set and golden at edges.
  • Transfer cookies to rack and let cool.

  1. I had a family size (30oz) roll of cookie dough so I doubled the recipe except for the amount of chips used. I used 1 cup butterscotch chips and because I ran out, 1 cup of chocolate chips. These were good, I think I am not wowed by the combination of PB and Butterscotch though. My sister loved them, and I made them for her, so I still give it 4 stars. Thanks!
     
  2. I thought if I just left the dough out of the fridge for half an hour, it'd soften up enough; but no, I think you really do have to break it up before you wait! lol. I also discovered after adding 1.25 cups butterscotch chips, that I only had 16+ ounces of dough. D'oh! So I left many chips in the bottom of the bowl. 1 cup would have been enough. Leaving aside all that ;) , it was really easy to make and very yummy. A very sweet treat! Reviewed for Photo Tag's Cookie Exchange.
     
  3. Love the flavor combinations here Mary of both p.b. and butterscotch. Never mixed the two together b/f and love the results. So quick and easy w/the already made up cookie dough.   4. I was looking for a recipe that was quick and easy to give my neighbors for Christmas. I had leftover butterscotch chips. I don't particularly like them, though I love peanut butter (I used chunky). So, I made this recipe (without the brown sugar). Be careful how many cookies you give away - these things are ADDICTIVE. The best, the very best peanut butter cookies I've ever tasted. Very moist, very flavorful and I will do them again. Thanks!!!
     
  5. I love making cookies that start with sugar cookie dough. I used crunchy peanut butter and 1/2 butterscotch chips and 1/2 peanut butter chips. Great cookie and quite sweet. Probably doesn't need the extra brown sugar.
