- 2 eggs
- 7⁄8 cup sugar (3/4 cup plus 2 tablespoons)
- 2 3⁄4 cups roasted peanuts, chopped
- 2 tablespoons flour
- 1⁄4 teaspoon salt
- 1 teaspoon vanilla extract
directions
- Preheat oven to 325°F.
- Combine flour, salt and peanuts. Set aside.
- Beat eggs.
- Add sugar and mix well.
- Add peanut mixture to egg mixture.
- Mix in vanilla extract.
- Drop by teaspoonfuls onto greased baking sheets.
- Bake for 15 minutes.
- Cool on rack.

This is a simple surprise. They are crunchy to eat and light. As I taste them to describe them I realize they could become quite addictive. It is almost like a candy. I don't bake a batch of cookies all at one time, instead I bake just a few so I always get them fresh and hot. Today I baked them for barely 15 minutes and they were much better. No longer crunch, now they were chewy.
