ingredients
- 8 ounces pasta, cooked (I like to use spinach fettichine)
- 1⁄2 cup chunky peanut butter
- 3 tablespoons tahini
- 4 cloves garlic, chopped
- 1⁄4 cup soy sauce
- 1 teaspoon crushed red pepper flakes
- 1 teaspoon chili paste
- 4 tablespoons rice wine vinegar
- 4 green onions, sliced
- 1 carrot, shredded
directions
- Cook pasta.
- Blend all other ingredients except green onion and carrot.
- Mix hot pasta with peanut butter mixture until pasta evenly covered.
- Stir in green onion and carrot.

The mix of spices in this peanut sauce was just right for me, although I did end up having to add a little bit of peanut oil (1 teaspoon for a recipe scaled down to 2 servings) that I had on hand because the sauce was quite thick at first and wouldn't spread through the noodles. Once the oil was mixed in though it coated the pasta nicely. Thanks for a yummy recipe!

Really good. Even BF liked it. i adjusted it quite a bit for what I had on hand and personal tastes. I found i needed more like 12 oz pasta. i used linguini and smooth pb because i had that in cupboard. i left out Tahini because BF doesn't like it. i used 'chili Garlic sauce/paste' instead of chili paste. So, put in less garlic. Used lots of garlic chives instead of green onions because thats what i had in my garden and i was out of green onion (which is definitely a must put in ingredient next time) i julienned carrot and finely sliced a celery rib. Then, after it was all mixed, etc... i decided it needed to be a 'main course' and cooked up the ground chicken I had, in peanut oil with dashes of onion and garlic powder and sprinkle of soy sauce. Then squirted juice of one fresh lime as another commenter did that and it sounded good to me. Yummy.!

I live in Omaha NE and am an audiologist at Boys Town National Research Hospital. I love to cook, as does my husband Michael. In the summer, we have a large garden and try to use alot of fresh fruits/veggies in our cooking. We have a 5 year old daughter, Kate and almost 2 year old son Sam and enjoy introducing them to new foods. One of their favorites is fresh pesto smeared on crackers!
