  • Preheat ove to 300.
  • Combine coriander, brown sugar, cumin, salt, black pepper and red pepper in a small bowl.
  • Beat egg whites in a medium bowl for 1 minute or until frothy. Add spice mixture, peanuts and black sesame seeds and stir well.
  • Spread on silpat in a pan in single layer, use 2 if needed.
  • Bake for 30 minutes or until nuts are dry and roasted, stirring occasionally.
  • Cool completely.
