Directions

  1. Boil water, add barley and simmer until barley is cooked.
  2. Mix next 6 ingredients with barley.
  3. Grease 1 1/2 quart casserole with 1 Tbs butter.
  4. Sprinkle with 2 Tbs bread crumbs.
  5. Add carrot/barley mixture.
  6. Top with remaining bread crumbs and butter.
  7. Bake at 375 F for 40 minutes.
