- 236.59 ml butter, softened
- 118.29 ml sugar
- 118.29 ml brown sugar, packed
- 1 large egg
- 44.37 ml orange juice
- 236.59 ml pecans, coarsely chopped
- 14.79 ml orange zest
- 532.32 ml flour
- 3.69 ml baking soda
- 2.46 ml salt
- 236.59 ml flaked coconut
- 236.59 ml carrot, finely shredded

FROSTING
- 473.18 ml powdered sugar
- 29.58-44.37 ml orange juice
- 14.79 ml orange zest
directions
- preheat oven to 350*.
- combine butter, sugar and brown sugar in bowl.beat at medium speed till creamy -- 1-2 minutes -- add egg, 3 tbls orange juice and 1 tbls orange zest.
- continue beating till mixed.1-2 minutes --
- add flour, baking soda, salt.reduce speed to low.beat 1-2 minutes.stir in cocont, pecans and carrots --
- by hand drop dough by rounded tspfulls 2" apart on ungreased cookie sheet.
- bake 10-12 minutes or golden brown --
- remove to wire rack and cool completely.
- to prepare FROSTING:.
- combine powdered sugar, 1 tbls orange zest and enough orange juice to desired spreading consistency.
- frost cooled cookies.top each cookie with a pecan half and a little grated orange peel.if desired.

I love cooking, and reading Christian fiction..I have 5 grandchildren..4 boys and 1 spoiled granddaughter...I also have a black cocker spaniel named Tobey..who is very spoiled..Love computer games, cross stitch and reading cookbooks..I was diagnosed with Acute Myeloid Leukemia almost a year ago, on September 26, 2005....was in an out of the hospital for 8 months, doing intensive chemo...I am doing well now, thanks for all the prayers...
