Pecan-Stuffed Eggs

- 6 hard-cooked eggs
- 3 tablespoons mayonnaise
- 1⁄4 cup chopped pecans
- 1 teaspoon grated onion
- 1 teaspoon vinegar
- 1⁄4 - 1⁄2 teaspoon dry mustard
- 1⁄8 teaspoon salt
- 1⁄2 teaspoon minced fresh parsley
- fresh parsley sprig (optional)
directions
- Slice eggs in half lengthwise and remove yolks. Mash yolks with a fork.
- Add next 7 ingredients.
- Spoon mixture into reserved egg whites. Garnish with parsley sprigs if desired.

I am a preschool teacher in Florida, here since marrying my hubby in Sept of '04. I have a stepdaughter.
