Basic sauce
- 5 ounces yellow rock sugar
- 1 cup mirin
- 2 cups light soy sauce

Ponzu sauce
- 1⁄4 cup soy sauce
- 1 tablespoon lime juice
- 1⁄8 teaspoon chili flakes
- 1 tablespoon mirin

Garlic Soy sauce
- 1⁄4 cup light soy sauce
- 2 tablespoons dark soy sauce
- 1 tablespoon fresh garlic, minced
directions
- For the basic sauce, mix and simmer on low for 15 minutes.
- For the other two, mix and reserve until ready to serve.
