Penne Pasta With Walnuts Green Onions and Goat Cheese

  • Prepare pasta according to package directions.
  • Meanwhile, heat olive oil in a large skillet. Add green onions and walnuts and saute over medium heat until onions are tender, about 5 minutes.
  • Add cooked and drained pasta to skillet along with goat cheese. Reduce heat to low and stir gently until cheese melts.
  • Add whipping cream and Romano cheese. Season with pepper and stir well. Garnish with spinach leaves if desired. Serve immediately.

  1. Very nice recipe, DH added salt but for me it was perfect. I did add sauteed mushrooms because I had them and thought they would go well with the dish (added them with the walnuts and onions), it was a nice addition but definitely not necessary, this is an excellent dish as it stands. I also didnt have spinach leaves, so used green onions to garnish. Lovely recipe, much enjoyed, thank you Kate, one I'll be making again! Made for PRMR tag game
     
  2. Very tasty, and quick! I sauteed the walnuts for 2-3 minutes, then added the onions and sauteed for 2 minutes more, but otherwise made the recipe as written. I garnished with green onion tops. Tagged for Rookie Recipes, due 05/16/14.

  4. We really enjoyed our dinner tonight. Served this as a main dish with salad and bread. I also think chicken or ham would be a great addition. It's quick for a weeknight dinner and I would also happily serve it to guests. Thanks for sharing.
     
  5. Wow, Kate wow. I knew that I would enjoy this dish. I just did not realize how much. I can`t get over the flavor. Its amazing. I can taste the walnuts, green onions, Fig Goat cheese and the Pecorina Romano that I used. So good. It is wrapped beautifully in a lovely cream sauce. Thank you so much for sharing a recipe that I will enjoy often. I am already looking forward to the leftovers tomorrow. Kudos ... for Making it into my Best of Cookbook for 2015.
