Penne With Cannellini Beans

  • Cook pasta according to package directions.
  • In large saucepan, combine the tomatoes and beans, and bring to a boil.
  • Reduce heat and simmer uncovered for 10 minutes.
  • Add spinach, cook and stir for 2 minutes, or until spinach is wilted.
  • Drain pasta, top with the tomato mixture. Sprinkle with cheese.

  1. I googled cannelini bean recipe and this is one of the ones that popped up. You see, I'm on a very tight budget right now and really don't have much; cannelini beans, pasta, diced tomatoes and Spinach is what I did have, yay! It worked out splendidly except I added Italian seasoning since I had plain diced tomatoes as well as powdered garlic and forgot about the spinach and added it in later. I don't have Romano cheese so at first I used mozzarella, for leftovers I used a mixture of cheeses. It was really good, simple and very affordable.<br/>For those who say it didn't taste that great, sure it was a bit plain and if I had been thinking more I would've added some garlic and I'm sure onion would be awesome in it too or mushrooms for that matter, but even as simple as I made it was great, and healthy.

  3. This was a good jumping-off point for a last-minute dinner. I mean, it was either find something quick, or make mac-n-cheese. Good inspiration using ingredients I had on hand. I used only one can of Italian style stewed tomatoes which I diced up, subbed garbanzo beans, sauteed onion and garlic, and added a can of artichoke hearts which I quartered. We are by no means a vegetarian family, but DH and I had no complaints about the absent meat. The beans and whole-wheat penne contributed a lot of substance to make up for it. Thanks!
     
  4. This is such a great recipe. It is quick, nutricious and cheap! Best of all, it tastes really good--my husband and son loved it. I didn't add as much spinach as called for as I only had about half a bag but I thought it was plenty. I also used whole wheat pasta to increase the fiber in our diets. This will be made frequently at our house because I usually have all the ingredients on hand. Thanks for posting Ms*Bindy!
     
  5. This recipe was cheap and extremely easy to make! It's not the most flavorful meal, but it's not bad. I added some garlic to give it a little extra taste. This is a nice recipe to have on hand if you want some healthy and quicky!

  1. This was a very easy recipe. The taste was ok for me. I didnt like the beans and thought it could use some meat instead. Just seemed like it was missing something.
     
  2. Very quick, easy and tasty. I substituted (a lot) of swiss chard for the spinach because I grow it in my garden. Also used whole grain pasta to make it healthier and added a little bottled garlic. You might want to drain off some of the excess liquid before serving.
