Penzey's Pumpkin Bars With Brown Butter Icing

  • For bars:

  • Preheat oven to 350°F.
  • Cream butter.
  • Add brown sugar, eggs, pumpkin, and vanilla; mix well.
  • In separate bowl, sift all of dry ingredients together.
  • Gradually add to the wet mixture and mix well.
  • Pour into a greased 9x-inch13 pan and bake for 15-20 minutes.
  • Let cool then top with brown butter icing.
  • Icing directions:

  • In a heavy bottomed pan, heat butter over low heat until it is a light brown color.
  • Remove from heat and add powdered sugar, vanilla, and milk.
  • Whisk until smooth and well blended.

  1. Delicious and moist! These bars melt in your mouth! Love it, make a quadruple batch, turned out amazing. ONLY, I made some brown butter CREAM CHEESE icing, instead. Turned out wonderfully. Thanks for sharing. This is a keeper.
     
  2. Picked this recipe up at Penzey's and have made them numerous times. Everyone loves them! Browning butter for the frosting gives the bars a wonderful flavor. As written, the frosting will be difficult to work with, not very spreadable, more like a fondant. I think it would be more effective to cool the butter to room temperature, then beat in the other frosting ingedients. I prefer the bars as is, but made a note on my recipe card for a less sweet version to try halving the icing and thinning with milk to make more of a glaze or drizzle. Thanks for sharing the recipe!

Part time office worker, full time servant to 2 growing boys, and 1 wonderful husband! I work for my husband so i quess you could say i'm sleeping with my boss! I love to eat. While i'm eating 1 meal, i'm thinking about what i want to eat at the next meal. I could just live on sweets, and take a pill for all my vitamins, and nutrition. I have no strong passions other than being quite lazy. I strive to be more physically active, but that usually requires me to move. I quess i would rather die happy and slightly overweight, than skinny and hungry.
