Peppered Tenderloin With Mustard Sauce

  • Heat gas grill on medium or charcoal grill until coals are ash white.
  • Press cracked pepper onto both sides of steaks. Place steaks onto grill. Grill, turning once, until internal temperature reaches 145°F (medium-rare) or until desired doneness (15 to 20 minutes).
  • Meanwhile, combine beef broth, garlic and sherry in small saucepan. Cook over medium heat until mixture comes to a boil (5 to 7 minutes). Continue boiling for 5 minutes. Stir in sour cream and mustard with wire whisk. Continue cooking until heated through (1 minute).
  • Serve sauce over grilled steaks. Sprinkle with additional cracked pepper, if desired.

  1. I halved the number of steaks, but kept the sauce the same, because I just love mustard sauce....I also added more dijon. My sauce was nice and thick, so maybe I didn't heat it enough to make it thin, but I just loved it! Thanks so much for sharing.
     
  2. Great flavor! I reduced a little more than recommended and added a bit more garlic & mustard for a little extra punch. I think this could be really good with some horseradish or wasabi too! Could get watery if heated too much after whisking in the sour cream.
     
  3. I won't rate this recipe now - I need to attempt it again because I'm sure I've done something wrong. My sauce turned out nearly as thin as water. I suppose I should have reduced it further, but I wanted to follow the recommended cook time before I deviated. (Don't trust myself!) I LOVE peppery steaks with cream sauce and this one sounds so good, so I'm going to try again. Thank you for posting, diner!

Made as a *Thank You* for your role as hostess of the *Football Pool* this yr, I had 2 problems making this recipe in good faith: 1) Snow was falling steadily on our balcony where our grill lives, so grilling seemed unwise & 2) My tenderloin was pork, not beef. I was still intent on making the recipe. So I cut the tenderloin in 8 2-in thick steaks, used Montreal Steak Seas for the cracked pepper & a bit extra garlic that I love, brushed a non-stick skillet lightly w/olive oil, pan-seared the steaks & put them in my oven to keep them warm. I deglazed the pan w/the beef broth & made the lovely sauce as written. All that said, the meat was tender, flavourful & not at all dry, but the sauce is the clear star of this easy-fix, versatile & company-worthy recipe. It is true perfection & the reason this recipe will find its way into my *Favourites of 2009 Cookbook* when that time comes. Thx for sharing it w/us. :-)
     
  5. Can't get much tastier then this. A sure fire way to get that special *someone* by presenting them with this mouth-watering treat. I give this 11.5 stars for the ease and the taste of the buttery, tender beef, but the magnificant part is the smooth mustard sauce that is quite frankly one of the greatest sauces I have tried perched a top a tenderloin of beef. I didn't change anything, I can see during a Holiday you might use this one a whole tenderloin of beef and perhaps serve extra on the side as you could almost drink this, it's that good. This is not a heavy sauce or gravy really, just perfect with the tenderloin. The timing was perfect on this, boil started about 5 minutes after putting together the broth, mustard, and garlic, took off heat, stirred in sour cream, as I didn't want to break the sour cream.. beautiful diner, my #1 fave recipe for 2009. Made for your glorious win, Football pool, January 2009.

I don't like to cook things that require going to specialized grocery stores. I subscribe to several cooking magazines, that usually, require everyday on-hand ingredients. <br /><br />I am not very fond of most seafood, but do enjoy lobster, grilled shrimp and chilean sea bass. I won't cook anything with rosemary or curry, as I really don't like either herbs' flavor.
