“This is a variation on a recipe I found in Taste of Home. This is a family favorite I make at Christmas time. It gets me in the holiday spirit every time! This is the cookie I usually make for cookie exchanges as well. On a side note - to make these extra fancy - dip 1/2 of each cookie in melted chocolate.”

Ingredients Nutrition

  • 34 cup butter, softened, no substitutes
  • 34 cup sugar
  • 1 egg yolk
  • 1 teaspoon vanilla
  • 2 cups flour
  • 12 teaspoon baking powder
  • 12 teaspoon salt
  • 12 teaspoon peppermint extract
  • 1 cup miniature chocolate chip
  • 14 teaspoon red food coloring

Directions

  1. In a mixing bowl, cream butter and sugar.
  2. Beat in remaining ingredients except food coloring. if your food coloring comes in a dropper - do 4 drops. Mix just until the dough has red swirls - then STOP.
  3. Drop by teaspoons onto ungreased cookie sheets. Flatten slightly.
  4. Bake at 350 degrees for 12-14 minutes or until bottoms start to turn light brown.
  5. Cool for 2 minutes before removing to wire racks.
  6. If desired, dip half of each cookie in melted chocolate and place on waxed paper to dry.
