Pepperoni Stuffed Mushrooms

"When I was first married and hosting my first family Christmas Eve celebration at my home, this was one of the appetizers I prepared. That was almost 20 years ago and my family still requests them each year. They're my 86-yr. old Grandmother's favorite! Very easy to prepare and I've never had any leftover. Can be prepared ahead of time and baked just before serving. Try them and enjoy!"

  • Remove mushroom stems and chop.
  • In skillet, melt butter, saute mushroom stems, onion, bell pepper, and garlic until onions are clear.
  • Add cracker crumbs, pepperoni, parmesan and seasonings.
  • Add enough chicken broth until mixture is stuffing consistency.
  • Fill caps with stuffing.
  • Place in shallow baking dish with 1/4" water in bottom of pan.
  • Bake uncovered@ 325 for 25 minutes.

  1. Very easy, very good, and great for entertaining because they can be made ahead. I made this for hubby, who is on the Atkin's diet, and he loved them. Sorry, but I had to make some changes to fit the diet. I omitted the bell peppers, crackers, and broth (didn't need it without the crackers.) They turned out beautifully!

I'm a passionate cook from Louisiana. I've lived all over the world, but have returned to the state and I'm currently residing in Covington, just north of New Orleans. Of course, my favorite food is Southern-style, especially the Cajun food of SW Louisiana. I have two favorite cookbooks that are so well-worn and dog-eared, they're almost unreadable. "Talk About Good", the Jr. League Cookbook of Lafayette, LA, and "Pirate's Pantry", the Jr. League Cookbook of Lake Charles, LA. Both are extraordinary. If I had a month off with no responsibilities, I'd take my husband and animal babies down to our camp in Grand Isle, LA. It's on the Gulf coast with a beautiful sea breeze and great fishing. When we're there, we fish for speckled trout and redfish and catch dozens of crabs off of the wharf. At night, we gather on the deck and fry fish and boil crabs with corn, new potatoes and whole pods of garlic. All of this accompanied by fun cocktails. The only thing that could improve this scenario, is if there was a Sunday afternoon Saints game on. I'm a HUGE, long-time fan. Ah, sheer bliss....
