Peppers and Eggs Sandwich

- 4 eggs
- 2 green bell peppers, cut into strips
- 1⁄2 onion, sliced thinly
- salt and pepper
- 1 tablespoon olive oil
- 4 Italian rolls
directions
- Heat olive oil in large frying pan. Add peppers, saute until almost limp, then add onions. Cook for another 5 minutes or so.
- Beat eggs, seasoning to taste with salt and pepper. Add eggs to pan on top of peppers and onions. Once eggs start to set up on the bottom, tip pan and with spatula lift a section at a time to allow uncooked egg to seep underneath cooked part. Do this until top is set but not completely cooked. Turn omelette over and finish cooking.
- Cut omelette in pieces and put in Italian rolls (will make 4 sandwiches).

I live in South Philadelphia, am Italian-American, have 2 "children", a boy to be married this July and a daughter who graduated last year from Drexel U. and is a playwright. Mu husband is a special education teacher in the Phila School District. We also have a beagle, Gomez, who loves to eat. I work at the University of Pennsylvania Library in the business office.
