Perfect Pineapple Pops

"Prep time doesn't include freezing time. If you use the orange-pineapple juice, they will taste more like OJ pops than pineapple. I prefer pineapple juice only."

ingredients

  • 2 cups plain yogurt
  • 12 cup canned crushed pineapple (packed in its own juice instead of packed in syrup)
  • 1 (12 ounce) can frozen pineapple concentrate, thawed (or orange-pineapple juice)

directions

  • Drain the can of crushed pineapple so all the juice runs out.
  • Put all the ingredients in a medium-sized bowl and mix them together.
  • Spoon the mixture into the paper cups. Fill them almost to the top.
  • Stretch a small piece of plastic wrap across the top of each cup.
  • Using the Popsicle stick, poke a hole in the plastic wrap. Stand the stick straight up in the center of the cup.
  • Put the cups in the freezer until the mixture is frozen solid.
  • Remove the plastic wrap and peel away the paper cup. You'll have pineapple pops to eat and share!
  • If you like, you can make this recipe using plastic Popsicle molds instead of the paper cups and Popsicle sticks. I always have such a hard time getting them out the holders though.

  1. YUM! I made two minor changes only because we didn't have everything on hand. I subbed the plain yogurt for vanilla, then subbed the crused for whole (and had to crush it myself), and instead of the frozen pineapple concentrate was just maybe a little more than 1/4 of a cup of regular pineapple juice. Plus I added the shredded coconut. It was a little difficult to get them out of the popsicle molds, but with a little warm water and a butterknife I carefully managed to get them out. Perhaps the papercup method would be better......... at least then you could always just peel off the paper. Very tastey, even my mom loved it and she doesn't like any type of "fruity" frozen treats. Thanks!

  2. Both Adults and Children loved these. Was a tad challenging removing these from my popsicle molds!

  3. I am really enjoying these pops even though there is a bit of chill in the air. I used non-fat yogurt. I also added some juice from the can of pineapple, a little splenda, and yellow food-coloring since I did not have condensed pineapple juice on hand and I was so anxious to make them. I think next time I might add some coconut milk and coconut! Yummy!
