Perfect Pot Roast

"This recipe was given to me by my mother-in-law who as a wedding gift put together a recipe book filled with favorite family meals. She still keeps the ingredients a secret since some of her boys are super picky eaters...now I'm making it for my family!"

  • Sear roast in oil on all sides in a heavy dutch oven.
  • Combine soy sauce and coffee and pour over meat after browning.
  • Put half of sliced onions on the meat and the other half in the sauce around the roast; place bay leaves in sauce.
  • Cover and bake 2 1/2 to 3 hours at 325 degrees.

  1. I did't expect this to turn out as well as it did. The texture and flavor were perfect. No mention of what to do with the garlic so I added it to the liquid. The liquid completely evaporated and the meat was perfect after 2 1/2 hours.
     
  2. I changed the cooking method to crockpot. The meat came out very tender, had a nice color, and worked well sliced for open faced roast beef sandwiches. I did think it was salty so elected not to make gravy from the broth. Thank you for sharing your recipe!
