Perfect Sandwich Bread

- 5 -7 cups bread flour
- 1 2⁄3 cups milk
- 1⁄2 cup warm water (110 degrees)
- 2 tablespoons active dry yeast (or 3 packets)
- 3 tablespoons honey
- 2 teaspoons salt
- 2 tablespoons oil
- 1 pinch sugar
- 1 egg, beaten (optional)
directions
- add yeast and a pinch of sugar (to feed the yeast) to warm water, let it sit 5-10 minutes until very foamy. water should be warm, but not hot, about 110 degrees.
- put proofed yeast into a large mixing bowl. add milk, honey, oil, and salt.
- add flour, start with 3 cups. mix with a sturdy spoon until smooth.
- add in more flour, one cup at a time until it gets to hard to stir.
- turn out dough onto a floured surface and knead for about 10 minutes adding more flour as needed. dough should be smooth, elastic and not too dry, but not sticking to your hands either.
- put dough in a greased bowl and turn it over to lightly grease it. cover the bowl with plastic wrap and a towel (you can use a damp paper towel and towel if you don't have plastic).
- sit it in a warm place (like on top of the fridge) for 1-1 1/2 hours until doubled in size.
- cut the dough in half as equal as you can. punch dough down, getting all the air out. form into a rectangle and roll up tight, tucking in the ends. it should look like a small loaf.
- place each loaf in a greased (I use shortening) loaf pan. cover again and let rise 45 minutes until about doubled in size.
- if you choose, brush with the egg for a nice glossy look (i prefer it).
- bake at 350 for 35 minutes on the middle rack (leave room, they will rise more in the oven!).
- the bread is done when it's golden and sounds hollow when you tap on it.
- remove immediately from the pans and cool on a cooling rack so the bottoms don't get soggy (check to make sure it's done by also tapping on the bottom-it should sound hollow also).
- cool at least 10 minutes before cutting.

Once the pandemic hit, I started baking bread again, and needed an everyday sandwich loaf. After trying a few recipes and ending up with bland, flavorless loaves, I found this recipe and everything changed. Thank you for it! I bake 2 loaves every weekend, and today am turning one loaf into cinnamon raisin bread.

I live in MI with my family and am always on the lookout for new tasty recipes that even my toddler will like. He loves meat and pasta, most fruit and is getting better about veggies. I cook every meal 7 days a week, with the occasional lunch or dinner out (very occasional!) but I love cooking so it's not a bad thing to me.

<br>I am a big sweets eater and recently got an ice cream maker so I have been whipping up lots of ice cream. My favorite so far has been Ben and Jerry's heath bar crunch, it's so creamy and only lasts 2 days in this house! Other baked goods and homemade bread are favorites too, though not much bread gets baked in the summer.

<br>I hate doing dishes! We are currently house hunting and a dishwasher is a must (we don't have one right now). Luckily my dh is pretty good about helping out with the dishes :)

<br>I know it seems like I give lots of good reviews, but there is a good reason: I know what we like, so I pick dishes I think we will like, and often we do. If i give a review of a recipe with no stars it's because I think I did something wrong usually so that's why it didn't come out right. Or if something has excellent ratings and I don't like it, I don't want to ruin that, because obviously I didn't like something, but that's not a refection of the actual recipe!

<br>I dislike when people don't make the recipe correctly and give it a bad review. Ok, if you change one or two small things, fine, but if you make major changes, not ok. And when people give a bad review because it was good, but not what they are looking for? Sorry, but I don't get that. YOU picked it, if it tastes good but wasn't what you were looking for, not the recipe's fault :)
