• In a small saucepan melt the butter and make a roux with the flour. Cook for a couple of minutes, stirring to prevent the roux from burning.
 • Stir in the warm beer by degrees, until you have a thick but smooth sauce.
 • Add the grated cheese and stir until melted. You should now have a thick paste.
 • Mix in the mustard and Worcestershire sauce and season well with black pepper.
 • Lightly toast and butter the bread, then pile up the cheesy mixture on each slice.
 • Cook under the broiler for a few minutes, until browned and bubbling.

 1. I'm not going to give this a star rating at this time as I think the results I got were due the fact that I couldn't get a good British cheddar nor probably the right beer in our small town. The recipe was well written and easy to follow and the consistency of it came out like the Welsh Rarebit I've been served in restaurants, it just didn't taste right, I'm sure due to my beer, mostly. Thanks for posting GardenGirl and I will try again when I can get to a proper beer. Made for Spring 2010 PAC.

I will start by saying that I love to cook and also love collecting recipes so I am very happy to have joined Recipezaar and really enjoy going through all the recipes that have been generously posted by other members.

I only cook for myself during the week but on weekends I usually have 2 meals to prepare for family and friends. I am on WW and try to keep my choices in line with WW but will indulge myself and save a few recipes that don't fit in with WW for special occasions. My favourite food is curry and am always on the look out for a new curry
recipe.

I love to garden as my Zaar name would indicate, I grow tomotoes and herbs but space is limited so mostly I have perennial and annual flowers and plants.

My baby is a lovely little ShihTzu X Poodle named Rosie, she is my only child so of course is spoiled rotten. Rosie's favourite meal is lamb and sweet potato.

http://www.recipezaar.com/members/home/708494/dirty%20Rosie.jpg

<img src="http://i23.photobucket.com/albums/b399/susied214/permanent%20collection/IWasAdoptedfall08.jpg" border="0" alt="Photobucket>" />
