Perfectly Juicy Roast Pork

"This is a recipe I found for roast pork almost by accident - it's adapted from a recipe for pork pasties. I discovered that if you just cook the pork in the same way it makes a perfect pork roast!! This is amazingly soft, juicy and succulent. Best roast pork I have ever eaten, I reckon."

  • Preheat oven to 220 degrees celsius.
  • Score pork skin and fat (do not cut into flesh).
  • Season to taste with salt and pepper.
  • Place in roasting pan and roast until skin begins to crisp up.
  • Add cider and stock to pan and cover with foil.
  • Reduce oven to 150 degrees celsius.
  • Roast for approximately 5.5 to 6 hours.
