- 3 tablespoons olive oil
- 1⁄4 lb pancetta (chopped)
- 3 small onions (sliced very thin)
- 1⁄4 teaspoon salt
- 1⁄4 cup red wine vinegar
- 1 teaspoon sugar
- 1 dash cayenne
- 3 tablespoons olive oil
- 2 large tuna steaks
- 2 bay leaves (ground)
- salt & fresh ground pepper (to taste)
- 1⁄4 cup dry white wine
directions
- Heat oil in a skillet.
- Add pancetta. Brown well. Remove with a slotted spoon. Set aside.
- Reheat skillet.
- Add the onions. Cook 5 minutes.
- Add the salt and vinegar. Let evaporate.
- Stir in the sugar, cayenne and pancetta. Keep warm.
- Heat oil in another skillet.
- Rub tuna with the bay leaves, salt and pepper.
- Sear 2 minutes each side.
- Add wine. Cover. Cook 30 seconds.
- Place on plates. Top with onions.
