  • Heat oil in a skillet.
  • Add pancetta. Brown well. Remove with a slotted spoon. Set aside.
  • Reheat skillet.
  • Add the onions. Cook 5 minutes.
  • Add the salt and vinegar. Let evaporate.
  • Stir in the sugar, cayenne and pancetta. Keep warm.
  • Heat oil in another skillet.
  • Rub tuna with the bay leaves, salt and pepper.
  • Sear 2 minutes each side.
  • Add wine. Cover. Cook 30 seconds.
  • Place on plates. Top with onions.
