  1. Heat oil in a skillet.
  2. Add pancetta. Brown well. Remove with a slotted spoon. Set aside.
  3. Reheat skillet.
  4. Add the onions. Cook 5 minutes.
  5. Add the salt and vinegar. Let evaporate.
  6. Stir in the sugar, cayenne and pancetta. Keep warm.
  7. Heat oil in another skillet.
  8. Rub tuna with the bay leaves, salt and pepper.
  9. Sear 2 minutes each side.
  10. Add wine. Cover. Cook 30 seconds.
  11. Place on plates. Top with onions.
