- 1 cup panko breadcrumbs
- 1 cup mozzarella cheese, shredded
- salt and pepper
- 4 boneless skinless chicken breasts
- 4 tablespoons pesto sauce
- 1 tablespoon olive oil
directions
- In a small bowl, combine panko, mozzarella, a large drizzle of olive oil, and a pinch of salt and pepper.
- Place chicken on lightly oiled baking sheet. Brush 1 Tbsp. Pesto onto top of one piece of chicken. Repeat with other 3 pieces. Press crust mixture to pesto to adhere. Roast in 450 degree oven for about 20 minutes, until chicken is no longer pink in center.
