  • Combine all sauce ingredients and set aside.
  • Heat wok. Add one teaspoons of oil. Sear chili paste, garlic, and minced green onion for 5 seconds to release flavors.
  • Add cooked ground chicken and sear, stirring and tossing for 5 to 10 seconds.
  • Add sauce mixture and simmer for 20 seconds. Add egg noodles to boiling water and heat for 5 to 10 seconds. Remove noodles from water and place in strainer. Move to serving plate.
  • Thicken chicken and sauce with a mixture of corn starch and water (equal parts). Consistency should be a very thick sauce to stand on top of the noodles. Pour over center of noodles.
  • Garnish with bean sprouts and julienne cucumbers.

  1. I LOVE PF Chang's Dan Dan Noodles and my husband wanted to surprise me and try out this recipe! I think it was about as close to the PF Chang recipe as it can get! We added almost 5 times the amount of chili paste because we like our dan dan FIERY.
     
  2. Great recipe. FYI we made this vegetarian by using Morningstar farms "ground beef" and vegan oyster sauce. It turned out very well.
     
  3. These were terrific. My husband and I are fighting to see who will get the leftovers for lunch tomorrow. I left out the oyster sauce, b/c I never have it in the house. Everything else, I did as written. These were so good. I can't say how authentic they were, as I haven't had the restuarant version in a long time, but they were so gosh darn good. We will eat them often. Thanks for posting.
     
  4. Tried this last night. I was puzzled by the quantities listed because 4 ounces cooked chicken didn't seem right for 4 people, based on experience eating this at the restaurant. Too, the sauce was lacking "something". I think they didn't list all the ingredients because if you could make this at home, why dine out? Anyway, the flavor was good, it just wasn't what we get at the restaurant.

I currently live in Stuart, Florida which is a great place to live. I moved here from Orlando many years ago to live the life of a beach bum and have gotten quite good at it. I am actually a Yankee, but becoming more Southern by the day. During the past several years I found an absolute love for cooking. The man in my life loves to eat so we make a good match. I have some favorite chefs and reviewers on this site and I know when I try their recipes I can never lose ! My passions are my family, my fiance', my cat (Tasha), the beach, and now cooking. My pet peeve is anyone that abuses animals. AND THIS IS A BIG PET PEEVE ! I am currently a Paralegal but can't see myself doing this forever. If I did not work, I would probably spend my time cooking and taking care of the 50-animals that I would most likely adopt.
