  • Slice peppers or leave them whole.
  • (To prevent bursting, cut two small slits in whole peppers.).
  • Pack peppers tightly into clean, hot jars.
  • Combine vinegar and water; heat to a simmer.
  • Do not boil.
  • Pour hot vinegar over peppers, leaving 1/2 inch headspace.
  • Add pickling salt and a clove of garlic to each jar then seal.
  • Process in boiling water bath for 10 minutes.

  1. if using carrots and onions, do they need to be sauted before being packed in jars?
     
  2. Is it a 1/2 teaspoon of pickling salt for each pint jar?
     
  3. For canning the 2qt jalapeno, do I have to boil the jars before putting the peppers in the jar? Nevermind I know the answer "Google home canning for basic canning instructions"
     
  4. I don't understand the last step. Do you immerse the entire jar in the boiling water bath?
     
  5. Do these need to be refrigerated or are they shelf stable?

  1. Made this recipe for my husband. Added onion slices and carrot slices. OMG!!! Hubby was surprised, said they were the best he ever tasted including store bought. I had to give them a try, they were fantastic. The whole family wants them now.
     
  2. This works out great for yellow banana pepper rings also.
     
  3. These turn out great every time. I use 1/2 tsp of pickling salt per jar and I mince the garlic and put about 1/2 tsp in each jar. If you follow this recipe, you should wind up with 4 pint jars, but I never know how many peppers I am going to end up with. I fill the jars with sliced peppers first and then adjust the liquid to match. I found it's a little more than cup of liquid per jar.
     
  4. These are YUMMY and SIMPLE. Great on burgers or over a taco salad. The key is the white wine vinegar, and they aren't too hot if youask me, but i know that's subjective. Like Mommyoffour stated, people keep asking for more of them. It's great way to use all those jalapeno's.
     
  5. When a recipe carries a warning and includes words like super hot, spicy, inferno or like death, it deserves my attention.

  1. Minced the garlic instead of using a whole clove in each jar.
