- 1 red onion, halved and thinly sliced
- 1 1⁄2 cups hot water
- 1 cup distilled white vinegar
- 3 tablespoons sugar
- 2 serrano chilies, halved lengthwise
- 1⁄8 teaspoon red pepper, dried, crushed
- 1⁄2 teaspoon salt
directions
- Combine hot water, vinegar, sugar and salt in a glass bowl. Stir until sugar and salt dissolve.
- Add onions, Serrano and red peppers. Stir to blend.
- Cover and chill overnight.
- Will keep for up to a week.
- Use slotted spoon to transfer to plate and serve.
