Pillsbury Pine Nut Pesto Appetizer

"My best looking appetizer looks like you bought it from a Greek bakery! This is so easy and sure to please! Takes just a few minutes to spread pesto, sprinkle cheese, nuts, in between layers of prepared pie dough, and into the oven."

  • Preheat oven to 400 degrees.
  • Place FIRST round of dough onto greased cookie sheet and bake for 8-10 minutes.
  • Spread pesto, sprinkle cheese and place SECOND ROUND of dough on top and seal edges with a fork.
  • Brush top of crust with a little milk.
  • Sprinkle pine nuts evenly and dust with paprika.
  • Bake about 15 minutes or until lightly browned.
  • Cool slightly and cut into wedges.

  1. It was good, not great. The pesto, and I heaped it on, was too oily with the Jack cheese. Next time I will make my own pesto with less oil and use a drier, pungent cheese like feta. It's a pretty basic recipe so could see adding cooked chicken breast and some sun-dried tomatoes to break up the oil as well. Otherwise a fantastic idea!
     
  2. Pretty good, and SO quick and easy! I think it needs more pesto, however. I also added garlic powder before baking. Pine nuts toasted up nicely. Used egg white on top instead of milk (personal pref.) Next time I'll try it with filo dough. Thanks for a great recipe!

  5. I'm giving this recipe a 5 even though several people didn't like them. They were all pesto lovers but not pie crust lovers. They were very easy to make and looked great. I say they were easy even though my oven acted up and only the top heating element was working so had to flip the pastry to finish the bottom. I also added just a sprinkle of feta along with the monterey jack. I will certainly try these again with a new oven and some different, more pie crust friendly people.

Hi everybody, I’ve been using “Zaar” website for the last year but ready to commit myself to adding my two cents worth (including some photos). I live with my DH and two great kids and one crazy dog in the foothills of Colorado. We have a great view with lots deer and red rocks. I come from a food-loving family, including my nearby sister who is willing to discuss "what's for dinner" first thing in the morning! I’ve loved cooking every since I was a teenager. I don’t work so I have lots of time to cook my latest craving. I love to try and duplicate dishes I enjoy from restaurants. I have a lot of cookbooks, but now use mostly “Zaar” recipes and from “Cooks Illustrated.” I love reading cookbooks (library) and like the old classics from Betty Crocker to backs of food labels. I love to research lots of recipes before I decide which one to make.
