  • 2 (8 ounce) cartons plain yogurt
  • 1 (4 ounce) package sugar-free vanilla pudding mix
  • 12 cup crushed pineapple, drained
  • 1 teaspoon coconut extract
  • 1 teaspoon rum extract
  • 1 cup frozen whipped topping, thawed
  • fresh fruit, cut into bite-size pieces (such as pineapple, apple, mandarin orange, strawberries, grapes, etc.)

directions

  • In medium bowl, blend yogurt and pudding mix; stir in pineapple and extracts.
  • Fold in whipped topping.
  • Cover.
  • Refrigerate until serving time.
  • Serve with fresh fruit.

  3. Dear Finicky, It is a good recipe. Don't feel bad about the recipe. If I make this in the summer at a swimming party or summer birthday party it is gone in nothing flat. Men , women and kids are gobbling it up. Come winter it just sits there. It took me a while to realize the season was a factor in whether or not it was eaten. My recipe calls for one yogurt, and a small cool whip. I use Vanilla, coconut or rum or almond extract and only 1/2 t of flavorings and taste. I don't always use more, sometimes I do. But I always use 3 flavorings. I make this 2 ways: 1 as sugar free as possible, the other full sugar....a diabetic in the group and WW girls. Good luck.

  5. This was a hit at DS's confirmation reception. Everyone asked for the recipe. We made a second batch and layered it with pound cake and fruit to create a yummy trifle. Thanks for a great recipe Stewie!

  1. I used sour cream in place of the yogurt and coconut cream pudding mix.
     
  2. Yummy! I'll be making this again for my work potluck. You have a lot of room to play with this recipe. I forgot to buy vanilla pudding, so I used pistachio instead. I also used vanilla extract instead of rum. My fiancee ate the dip with a spoon. I was confused about the (1 ounce) package sugar-free vanilla pudding mix (4 serving size), so I used the whole 4oz package and it turned out fine.
     
  3. This was really really excellent. Instead of vanilla pudding I used cheesecake because I was out of vanilla and figured cheesecake was neutral enough. I used all fat free products and yet it tasted so decadent. Served it with apples, bannanas, and apricots. And when I got the late night munchies I ate it with pretzel sticks. Thanks so much! This one is fabulous.
