- 2 (8 ounce) packages cream cheese, softened
- 1 cup minced celery
- 1⁄2 cup chopped green bell pepper
- 1 teaspoon minced onion
- 1 (20 ounce) can crushed pineapple, drained
- 1 cup chopped pecans (optional)
directions
- 1. Be sure to drain the pineapple really well, otherwise it may turn out more like a dip rather than a cheese ball.
- 2. Combine cream cheese, celery, bell pepper, onion, and crushed pineapple.
- 3. Divide the mixture in half and shape into two balls.
- 4. If desired, roll each ball in pecans.
- 5. Chill several hours or overnight.
- 6. Serve with crackers.
