- 1⁄2 cup barbecue sauce
- 1⁄2 cup orange juice
- 1⁄4 cup packed brown sugar
- 2 tablespoons vegetable oil
- 2 tablespoons all-purpose flour
- salt and pepper, to taste
- 4 cups cubed cooked chicken
- 2 (5 1/2 ounce) cans pineapple chunks, drained
- 1 (8 ounce) can sliced water chestnuts, drained
- 1 1⁄2 teaspoons ground ginger
- hot cooked rice
directions
- Add the first 6 ingredients to a saucepan; stir until mixture is smooth.
- Bring mixture to a boil; lower heat and simmer for 2 minutes, make sure to stir occasionally.
- Add in the chicken and next 3 ingredients; cover and simmer for 10 minutes or until heated through.
- Season with salt and pepper to taste.
- Spoon rice onto individual serving plates; top with chicken mixture and serve.

As I was making this, I was wondering how all the different ingredients would taste together. I sampled the chicken with the sauce, and thought it was probably a 3 star. Pretty sweet, and had an odd flavor. Not odd bad, just odd. I let everything kind of marinate over night, and served it over rice tonight. What a big difference the rice made! Definately cut down on the sweet taste! I am going to try making this again, and freezing some like the Uncle Ben's rice bowls I used to eat. It will make for a good lunch! Thanks!

Even my picky eaters gave this dish 5 stars. I chose this recipe at the last minute because I had all ingredients except chestnuts, which I will add next time. I diced fresh chicken breast and stir fried it in the skillet then added the sauce and pineapple. I keep fresh ginger in my freezer so I shredded that instead of using ground ginger. It adds such a great flavor! Served it over brown rice. It was so easy and fast I will definitely make this often!
