Directions

  1. Drain pineapple reserving 2 T. juice.
  2. Arrange lettuce, chicken, onion and cilantro on large serving platter.
  3. Blend oil, vinegar, reserved pineapple juice, honey, soy sauce, ginger and mustard.
  4. Drizzle dressing over salad.
  5. Garnish with chopped peanuts, if desired.
  6. Serve immediately.
