Pineapple-Glazed Chicken With Jalapeno Salsa

  • Preheat oven to 400 degrees. Bring pineapple juice, brown sugar, and mustard to a boil in a small saucepan, stirring to dissolve sugar. Boil until glaze has thickened slightly, about 1 minute. Season with salt and pepper.
  • Mix pineapple, red pepper, cilantro, onion and chiles in a medium bowl. Season with salt and pepper.
  • Line baking sheet with foil. Place chicken on sheet and brush with glaze. Bake 15 minutes. Brush again with glaze, then broil until cooked through and golden, watching closely to avoid burning, about 5 minutes longer. Let rest 5 minutes. Spoon salsa over chicken and serve.

  1. I clipped this from the March Bon Appetit issue and decided to try it a few nights ago. We really liked the salsa and would definitely make it again. I used 1 1/2 Tb fresh jalapeno chopped and Dijon mustard since we dont ever have yellow mustard on hand. We thought the chicken came out a little bit dry. Next time, we might try grilling the chicken and topping with the salsa. Thanks!
     
  2. This was pretty disappointing. The glaze was way too similar to the one I usually use for ham, and my family and I just couldn't accept it on chicken. We had mixed feelings over the "salsa" as well. My DH didn't like it at all, while my DD and I liked it well enough. I probably won't make either again though.
