Pineapple Luau

"This is a great girl's night recipe. I don't know where my mother found it, but I do know that once we bring it around to a new set of friends, we are asked to bring it back again! You can find the cream of coconut in the drink mixers section - it's not the coconut milk found in oriental food sections. Vodka is a 750 ml bottle. Serving number depends on the size of your cups!"

  • 1 (12 ounce) can frozen lemonade
  • 1 (15 -20 ounce) can cream of coconut
  • 2 (46 ounce) cans pineapple juice
  • 1 (25 ounce) vodka
  • 2 liters Sprite

  • Chill before serving.

  1. Yum! I love pineapple and coconut together, and this was a wonderful meeting of the two. I cut the recipe down to 2 servings. The one change I made - this is a pretty sweet drink so I subbed plain seltzer for the sprite and added a little fresh sweet lime juice (which isn't limey or particularly sweet, as it turned out), it's still sweet but very tasty. Made for Pick a Chef Spring 2010.
     
  2. Oh, so refreshing! I felt like I was back in Jamaica with this one. I reduced the recipe to make just a few drinks and then proceeded to drink them all myself! LOL This goes down very smooth. Just the right amount of tartness provided by the lemonade and the pineapple, which is definitely the star of the show. The coconut creme doesn't overpower anything here, it's just a very nice compliment to the pineapple, without tasting like a pina colada. I used Grey Goose vodka for this little treat.   3. A very tasty cocktail with a definite tropical flavor. You can never go wrong with that classic combo of pineapple and coconut together! And it's a sure hit in this drink. I thought the Sprite was a little much, but then it might be that I added more than was intended. I garnished our drinks with a bit of canned pineapple that I have been trying to use up, and it was a great touch. Thanks for sharing your recipe, MacGuyver. Made for Spring 2011 Pick-A-Chef cooking event.
