Pineapple Muffins from Mini-Wheats

"This is a recipe that was on the side of a box of Mini-Wheats breakfast cereal from Kellogg's. I have been making it for my husband for over 25 years and he would have them every day if I would make it. I do sometimes vary the recipe by adding the following: nutmeg, cinnamon, cranraisins, raisins and any type of nuts."

  • 1 14 cups all-purpose flour
  • 1 tablespoon sodium-free baking powder (I use regular)
  • 14 cup firmly packed brown sugar
  • 9 kellogg's frosted mini-wheats cereal, finely crushed (Apple or Sugar Frosted)
  • 1 egg
  • 14 cup vegetable oil
  • 1 (8 ounce) can crushed pineapple in juice, not drained

directions

  • Stir together flour, baking powder, sugar and crushed Kellogg's Frosted Mini-Wheats biscuits.
  • In large mixing bowl, beat egg slightly. Stir in oil and pineapple including liquid.
  • Add flour mixture, stirring only until combined. Portion batter evenly into 12 greased 2 1/2 in muffin pan.
  • Bake at 400 degreed for about 20 minutes or until golden brown. Server warm.
