Pineapple Muffins from Mini-Wheats

- 1 1⁄4 cups all-purpose flour
- 1 tablespoon sodium-free baking powder (I use regular)
- 1⁄4 cup firmly packed brown sugar
- 9 kellogg's frosted mini-wheats cereal, finely crushed (Apple or Sugar Frosted)
- 1 egg
- 1⁄4 cup vegetable oil
- 1 (8 ounce) can crushed pineapple in juice, not drained
directions
- Stir together flour, baking powder, sugar and crushed Kellogg's Frosted Mini-Wheats biscuits.
- In large mixing bowl, beat egg slightly. Stir in oil and pineapple including liquid.
- Add flour mixture, stirring only until combined. Portion batter evenly into 12 greased 2 1/2 in muffin pan.
- Bake at 400 degreed for about 20 minutes or until golden brown. Server warm.
