Pineapple Pecan Cups

Crust
- 3 tablespoons butter, softened
- 1 1⁄2 ounces cream cheese, softened
- 1⁄2 cup all-purpose flour

Filling
- 1 (3 ounce) package cream cheese, softened
- 1 tablespoon sugar
- 1⁄4 cup crushed pineapple, drained

Topping
- 1 egg
- 1⁄4 cup packed brown sugar
- 2 tablespoons light corn syrup
- 1 tablespoon butter, melted
- 1 teaspoon all-purpose flour
- 1⁄2 teaspoon vanilla extract
- 1⁄4 cup chopped pecans
directions
- In a small bowl beat butter and cream cheese until smooth. Add flour; mix well. Divide dough into six portions; press onto bottom and 3/4 inch up sides of six muffin cups coated with cooking spray. Set aside.
- In another bowl; beat cream cheese and sugar until smooth; stir in pineapple. Spread into each cup. Combine the egg, brown sugar, corn syrup, butter, flour and vanilla; stir in pecans. Spoon over filling.
- Bake at 350 degrees for 25-30 minutes or until topping is set. Cool for 10 minutes before carefully removing from pan to a wire rack to cool completely.

I live in Pittsburgh, PA and have loved cooking and baking as long as I can remember. I learned a lot from my parents and grandmothers. I do a lot of cooking and baking but if given a preference I would rather bake. I work in admissions in an emergency room on the overnight shift. I love nothing more than baking when I get home to relax and destress. I often make things to take into work and share with coworkers.
I have so many cook books at home it's crazy, but I most often turn to the recipes I have put together over the years from friends and family. And I constantly keep adding to it.
My name on here is a nickname given to me by my aunt. I was always cooking or doing crafts and she used to say I was a little susie homemaker.
