Pineapple Sweet and Sour Sauce

- 2 (793.78 g) can pineapple tidbits (drained and reserve the juice from both cans)
- 44.37 ml cornstarch
- 14.79-29.58 ml vegetable oil
- 2 garlic cloves (minced, or to taste)
- 0.25 ml cayenne pepper
- 118.29 ml ketchup
- 118.29 ml brown sugar
- 78.78 ml white vinegar
- 29.58 ml soy sauce
- black pepper (to taste) (optional)
directions
- Drain both cans of pineapple over a bowl.
- Add/whisk in cornstarch until smooth and combined (no need to measure out the juice) set aside.
- In a small saucepan heat oil over medium-low heat; add in garlic and a small pinch cayenne pepper; stir for 2 minutes.
- Add in ketchup, brown sugar, vinegar and soy sauce; cook stirring until simmering.
- Add in the juice/cornstarch mixture; bring to a boil, stirring or whisking constantly until thickened.
- Reduce heat to low and simmer for 3-4 minutes.
- Mix in the pineapple tidbits.
- Season with black pepper to taste if desired.

I tried this recipe for a chinese birthday party i was throwing. Everyone loved it. They didn't think it tasted like sweet and sour sauce they have had before but they really liked it anyways. I'm not sure if i used exact measurements or not so maybe that had a little to do with it. The second day, it tasted really pineapple-ly to me. Next time i will only use a very little of the actual pineapple peices in mine...but i will try this recipe again. Like I said, it was a BIG hit at the party.

Definitely a recipe I want to keep on file! I followed it right down the line, although I did attempt to make sure that the crushed pineapple & diced tomatoes were also 'finely chopped' [trying to chop crushed pineapple is an experience, but I did have a very sharp knife]! Anyway, the result is OUTSTANDING, & I intend to encourage people to use it on poultry, fish, pork, crackers...whatever! Many thanks for posting it!
