  • Combine Cherries (pitted, if you like), strawberries and raspberries in a large bowl. Use a melon baller to cut balls from the watermelon; alternatively cut the watermelon in to cubes. Add to the bowl.
  • Combine mint and sugar in a small bowl. Use the end of a rolling pin to crush the mint and sugar together until well combined or use a mortar and pestle. Sprinkle only half the mint sugar over the fruit and squeeze over the juice from only 1 lime.
  • Mix gently to combine and stand for 10 mins until a syrup develops. Serve in a large bowl with the remaing mint sugar and lime wedges on the side for guests to help themselves.

I live in Keilor Downs, Victoria in Australia. I am a receptionist in Melbourne. My favorite cook books are anything Weight Watchers or Simply 2 good 2 be true also any muffin or scone cook books. I love cooking easy stuff but I love a challange ocasionaly on the weekends when i have a bit more time. My pet peeve is how much capsicum/bell peppers are in recipes now as i am elergic to them.
