“This is a chilled salad that was served at a brunch. It would be a great side dish with any meal though. The lemonade is so refreshing and cleansing! I loved this!”

Ingredients Nutrition

  • 12 ounces frozen pink lemonade concentrate
  • 1 (16 ounce) can crushed pineapple, drained
  • 1 (14 ounce) can Eagle Brand Condensed Milk
  • 1 (8 ounce) container Cool Whip
  • 36 Ritz crackers, one sleeve
  • 4 tablespoons butter


  1. Mix 1 sleeve Ritz crackers with 4 tbs. melted butter.
  2. Spread this in 9x13 dish.
  3. Make sure the cool whip is thawed. Stir so that it is creamy, not lumpy. Mix the cool whip and all other ingredients together really good.
  4. Pour mixture on top of crackers.
  5. Chill in the refrigerater for at least 1 hour and serve. Cooking time is the chill time.
