Pink Syllabub

  • Mix wine, liqueur, lemon rind and sugar in a bowl and set aside for at least 30 minutes.
  • Add cream and whip until the mixture has thickened enough to stand in soft peaks.
  • Break up lady fingers and divide between 2 glasses. Place cream mixture in a pastry bag with a large star or plain tip and pipe it over the lady-fingers. Alternatively, simply pour the syllabub over the lady-fingers.
  • Chill until ready to serve. Before serving, decorate each syllabub with red currants if available, or soft fresh fruit, or mint sprigs.
