- 1 cup canned pinto beans, rinsed and drained
- 1 1⁄2 teaspoons chili powder
- 2 teaspoons ground cumin
- 1 cup fat free egg substitute
- 4 (10 inch) fat-free whole wheat tortillas, warmed
- 4 tablespoons shredded reduced fat monterey jack pepper cheese
- 4 tablespoons prepared salsa
directions
- Spray a medium nonstick skillet with nonstick spray and set over medium-high heat.
- Add the pinto beans, chili powder, and cumin. Cook, stirring, until heated through, about 5 minutes.
- Add the egg substitute and cook, stirring until set, about 3 minutes.
- Place one-fourth of the egg mixture along one side of each tortilla and top with one tablespoon of the pepper jack and 1 tablespoon of the salsa. roll the tortillas up to enclose the filling.
- 1 burrito= 342 cal, 3g. fat, 11g. fiber=6 points.

I love Zaar! Iam so addicted to this site.
