  • Boil ham hocks on high heat for 45 minutes.
  • Add all seasonings except hot sauce and onion. Continue boiling for 20 minutes.
  • Add pinto beans, hot sauce, and onion. Boil on medium heat until beans are done to taste (usually I go for about 1 1/2 hours).
  • Serve with rice and a meat side dish. Tastes even better the 2nd day!

  1. This is my favorite Pinto Beans recipe...I only use one LARGE ham hock though. I boil my ham hock for about 30 minutes with minced garlic and onion. This is the 'broth' I use to cover my beans in the crock pot! I use all of the listed seasonings + hot sauce (my favorite part) and these beans are to die for! My whole family loves them - definitely no left overs :)...I like to add a tablespoon of vinegar to my OWN personal bowl. Served with a side of skillet cornbread & dinner is served!   2. We really enjoyed this dish. I used some chicken broth to boil the ham hocks with additional water added. I left out the red pepper flakes and substituted jalapeno peppers which gave it a nice bite. The beans were very flavorful. Flavors blended very well together. Thanks for sharing. :)
     
  3. Instead of ham hocks use ham shanks. More meat and less bone also easier to strip. I make this a lot for the guys at the Lodge and they always want me to make it. I think it tastes better in the winter when it is cold and rainy.

  5. This is a good basic recipe. My variation- I bring the raw dry beans to a boil, cook them at a slow boil for an hour. Then I throw it all together including ham hocks or shanks (which are already cooked when they’re sold), low and slow. I use chicken better than broth. Saute onions, celery, carrots, poblano pepper, other chili (Serrano, jalapeno or Anaheim, depending on your heat level), garlic before adding them in. I add a can of chipotle peppers too. Oregano, chili powder, salt, pepper, cumin, 2 bay leaves. Just a thought anyway. Make it your own
