"I love to make this in the summers. Great for picnics. So quick to put together and so refreshing. My friend gave me this recipe about 20 years ago. This can also be stored in the freezer."

  1. This was good, but just a little on the sweet side for me (I couldn't find sugar-free pistachio pud or I would have used that). I added about 1 1/4 cups fat-free pineapple-coconut-banana yogurt and that took care of the problem. Since I only had a 14oz can crushed pineapple, the added yogurt also helped to make the texture smoother! I had to omit the nuts this time, because dh didn't want them, but I did sprinkle on some chopped pecans on my serving! Made for Everyday Holiday Tag Dec'09.
     
  2. Although I haven't made THIS particular recipe, I have one like it with the exception of the coconut and pecans instead of walnuts or cashews. DS loves me to make this so he can watch it go from white to green :) A VERY yummy salad that is good enough to be a dessert.
