Pizza Crust - Low Carb

  • Preheat oven to 350 degrees F. Cut 2 pieces of parchment paper out for baking sheet if you are making one large crust. For individual pizzas (this will make 4) no need for extra parchment- just flip them over with a spatula after 15 minutes of baking.
  • Mix cheese, eggs, flax, coconut flour, and baking powder together until a sticky wet dough is formed. Spread with a spatula or with dampened hands to ¼ inch thickness on a baking sheet lined with one piece of parchment paper.
  • Bake for 30 minutes in preheated oven. Halfway through the baking process, flip crust over by sliding it off the baking sheet with the parchment paper, placing the second piece on the sheet, and turning the crust over unto the new sheet and peeling the old paper off. Return to oven until done baking.
  • Remove from oven, slide off of parchment paper, and flip over again for cooling.
  • Once crust is cooled, top with sauce, pre-cooked veggies or meats, and cheese. Set crust with toppings under the broiler on high for a minute or two until cheese is melted and bubbly. Slice and serve.

  1. This was delicious and very filling. I have another recipe that I was going to try, but I think that I will stick to this one. I used unsweetened shredded coconut, instead of coconut flour; I thought that I had the flour, but oops, I didn't. It still tasted really good. I think I will try it with almond flour next time. I also didn't use the flax. I had some, but I just wanted to try it without. I made the four personal pizza, which worked out great. We all got to have what we liked!!! : ) DH who is very picky when it comes to LC, really enjoyed it. He wants me to make a white pizza for him tomorrow for lunch. My DD wasn't so pleased, but she didn't like the sauce (she hates sauces) next time I will make her's without. : )
     
  2. I love this pizza crust! I am gluten free due to intolerance, and low carb by choice! I love that there is no flour or refined carbs in this crust . My kids (4 and 2.5) LOVE when I make pizza now. This crust is delicious!

I was so leery of making a mozzarella crust where you didn't have to melt the cheese first and then scorch your hands trying to get everything to mix (think fathead), but I was so pleasantly surprised by this. I did miss the part about letting it cool, instead I undercooked it just a touch, then topped with eggs, bacon, sausage, a low carb gravy, and more cheese before finishing. Easy to flip, easy to make. This one is a keeper. Thanks for sharing.
