  • 16 12 ounces bread flour
  • 2 teaspoons sugar
  • 12 teaspoon yeast
  • 1 13 cups ice water
  • 1 12 teaspoons table salt (TABLE salt)
  • 1 tablespoon oil (unflavored, like vegetable)

  • Mix flour, sugar, and yeast into a food processor and mix well.
  • Add 1 1/3 cups ice water and process 10 seconds, until mixed.
  • Let rest 10 minutes.
  • Add 1 1/2 tsp table salt and 1 Tablespoon of vegetable oil. Process 30 - 60 seconds.
  • Turn out onto a lightly floured board (or oiled surface) and knead for about 1 minute.
  • ball up the dough, put into a lightly greased bowl, refrigerate at least 24hrs up to 3 days (3 days is better).
  • Divide dough in half, ball up, put on greased pan, cover with oiled plastic wrap and lest rest for 1 hour.
