- extra virgin olive oil
- 15 -20 cherry tomatoes
- fresh mint leaves

- 1⁄2 cup classic tomato sauce
- 200 g goat cheese (thinly sliced)
directions
- Preheat the oven to 425 degrees F.
- Lightly grease 2 baking sheets with olive oil.
- Cut half of tomatoes in half.
- Chop half of the mint leaves.
- Mix in 1 teaspoon of olive oil.
- Cut the pizza dough in 4 portions.
- Roll each portion in round pattern in a lightly floured surface.
- Transfer to baking sheets.
- Top the pizza base with thin layer of tomato sauce.
- Add cheese slices, sliced and whole tomatoes and chopped mint.
- Bake it in 2 batches for 12-16 minutes or until the crust is golden in colour.
- Drizzle with olive oil.
- Finally, garnish it with remaining mint leaves and ground pepper.
