Pizza Pitas

ingredients
- 6 pita breads
- 200 ml pizza sauce (I use Hunt s)
- 2 teaspoons olive oil
- 1 red onion, chopped
- 1 (4 ounce) can mushrooms
- 2 teaspoons soy sauce
- 10 black olives, chopped
- 6 capers
- 5 cherry tomatoes, cut in halfes
- 100 g frozen spinach, defrozen and drained
- 1 (4 ounce) can chickpeas, canned
- 1 teaspoon cardamom, ground
- 1⁄2 bunch fresh cilantro leaves
- 200 g Laughing Cow cheese, wedges
- 1 -2 teaspoon black pepper
directions
- Preaheat oven to 350°F.
- Cut all the vegetables into small pieces.
- Heat oil in pan and fry onion.
- Add mushrooms to heat.
- Spice with soy sauce.
- Set aside.
- Combine olives, capers and cherry tomatoes.
- Set aside.
- In a pan heat spinach, add chickpeas (drained).
- Spice with cardamom and roughly chopped up cilandro leaves.
- Set aside.
- Smear each pita bread with pizza sauce.
- Put ingrediants from each of the 3 combinations onto each pita bread.
- You can also choose your favorite and stick to one of the combinations.
- Cut cheese into chunked slices and put on top.
- Spice up with pepper.
- Heat in oven for 5 to 8 minutes or until the cheese has melted, it should look golden.

Definetely a crowd pleaser with my family, although I personally enjoyed the second one which was the spinach and chickpeas. The mushroom version was also excellent as me and my family enjoy mushrooms every other week, so this was a nice way of enjoying them. I love cheese on pizza so the third option was also very good.

Originaly from Austria i moved to Iceland in 2002 after a life long longing for this country i felt at home at once and now it is the place where i belong. I am living with my wonderful husband in a nice, bright flat in the subburb of our capital, Reykjavik. I love to cook and eat healthy and i mainly use whole grain. I do not use any ready made mixes and i try to keep the food i cook close to the ingrediants i used.
I am an elementary school teacher but i work in a kindergarden now and i actually prefer that field.
Besides cooking and though especially baking, i like photography, knitting, swimming, long walks, all kind of sports, animals and nature among much more.
