Pizza Potato Skin Luges

  • 4 large baking potatoes, scrubbed
  • 12 cup pizza sauce
  • VARIATION 1

  • 24 small slice pepperoni
  • 12 cup sliced mushrooms
  • pickled hot pepper rings
  • VARIATION 2

  • 2 tablespoons butter, melted
  • 6 slices bacon, cooked and crumbled
  • 1 cup tex-mex cheese, shredded
  • 1 green onion, thinly sliced

  • Prick potatoes all over with a fork. Place on a baking sheet in a 400F oven for about 1 hour or until tender. Alternatively, cook in microwave on high for about 10 minutes.
  • Let potato cool slightly until they can be handled.
  • Using a serrated knife, cut each potato in half and scoop out some of the potato, leaving about 1/2-inch wall all around.
  • Reserve the inside of the potato for another use. Plae potato halves onto parchment paper-lined baking sheet.
  • Spread each with pizza sauce. Top with pepperoni and mushrooms, and sprinkle with cheese.
  • Alternatively, drizzle with butter and top with bacon and sprinkle with Tex-Mex cheese.
  • Place baking sheet in a 400F oven for about 20 minutes or until a golden and crisp.
  • Sprinkle with with hot pepper rings or gren onion, if using.

Her sweets are fantastics, especially her pound cakes, Yummm <br> <br>I guess the dish that I am famous for is my Christmas ham - my family all comes home for Christmas, and if i don't have my ham they are dissapointed, and my grandson wants the pistachio squares!!! so I guess that is the dishes that I'm famous for.
