  • Bake potatoes until done, about 40-45 minutes.
  • Scoop out potato - leave about 1/2 inch along the shell.
  • Mash potato until smooth, adding the milk and parmesan cheese until blended.
  • Stir in about 1/2 of mozzarella, parsley, and pepperoni.
  • Mound the potato mixture back into the shells and arrange on a baking sheet.
  • Spoon about 2 tablespoons of sauce over each and sprinkle with the remaining mozzarella cheese.
  • Bake at 400 degrees for 5-8 minutes until hot and the cheese is melted.

  4. I made this for the Summer 2006 Pick A Chef Contest. I just have one thing to say about this... OH MY GOODNESS!!!!! This is AWESOME!!!! This needs to get a 7 STAR!! NOT a 5 Star!! Their is only one thing that I would change. Don't leave any potatoe in the skin. Scoop as much of it out as you can!! Because once you taste that filling, that last thing your going to want to do is eat plain old potatoe!! So I suggest you get as much potatoe out of there as possible since it is just AWESOME taste!!!!

I live in Las Vegas. I was lucky enough to run into Recipezaar around Nov. 2000 and got hooked quickly. I am a cookbook collector and have been collecting recipes for as long as I can remember.
