  • Follow muffin method of mixing.[I think Grandma meant to combine the dry and wet ingredients separately, then stir all together until just moistened leaving plenty of lumps. Finally, cook at 400 F for 20 to 25 minutes.].
  • Variations:

  • Whole Wheat Muffins - Substitute 1 c whole wheat flour for 1 c white flour. Dates or raisins may be added, if desired.
  • Jelly Muffins - Plain muffins plus jelly. Fill pans half full of batter, add 1/2 t of jelly to each pan, cover with rest of batter and drop another 1/2 t of jelly on top.
  • Date Muffins - Plain muffins plus 1/2 c chopped dates. Add chopped dates to dry ingredients.
