ingredients

1 lb sweet potato (I used a combo of drained, leftover Thanksgiving candied yams and boiled sweet potatoes)
2 tablespoons butter
¹⁄₂ cup condensed milk
2 eggs
¹⁄₄ cup brown sugar
¹⁄₂ teaspoon ground nutmeg
¹⁄₂ teaspoon ground cinnamon
1 teaspoon vanilla
9 inches unbaked pie shells

directions

Preheat oven to 350 degrees.
Drain and mash sweet potatoes and butter using a fork.
Using a mixer, mix in condensed milk, eggs, brown sugar, nutmeg, cinnamon and vanilla.
Pour into unbaked pie shell.
Bake at 350 degrees for 50-60 minutes (until knife inserted in center comes out clean).
